Introduction

An step by step process to make cabbage fry at home. The below amount will create quantity to be had by two people for 2 to 3 days

Ingredients

  1. One no. cabbage
  2. Three medium size potatoes
  3. One no. onion
  4. One no. green chilly (or dried red chilly)
  5. Mustard oil and seeds
  6. Salt, Dhaniya(Coriander) and red chilly powder

Pre cooking

  1. Start cutting vegetables as below:
  2. Cabbage - one whole or most of one as it generally reduces after cooking. This takes time
  3. Potatoes - cube shaped
  4. Onion - long slices
  5. Green chilly - small pieces

Cooking

  1. Pre heat the cookware. I am using a Demeyere Stainless steel woke and cook it over a induction cooker
    1. 5 minutes at 400
    2. 10 minutes at 600
    3. 1 minute at 800 and then back to 600
  2. Add mustard oil. Not too much
  3. Add mustard seeds, chopped onions and chillies
  4. Fry it for 3 minutes till they become soft
  5. Add cut potatoes. Fry for 5 minutes
  6. Put the cut cabbage and add turmeric
  7. Keep stirring and mixing for 5 to 8 minutes
  8. Add salt and dhaniya(coriander) powder, chilly powder
  9. Keep stirring every 2 to 3 minutes
  10. Put on the lid and cook for 20 to 25 mins
  11. The cabbage fry is done. Enjoy!

Observations

  1. The time I cooked, the base of the steel pan had some burnt residue. It nothing harmful
