Cabbage stir fry algorithm
Introduction
An step by step process to make cabbage fry at home. The below amount will create quantity to be had by two people for 2 to 3 days
Ingredients
- One no. cabbage
- Three medium size potatoes
- One no. onion
- One no. green chilly (or dried red chilly)
- Mustard oil and seeds
- Salt, Dhaniya(Coriander) and red chilly powder
Pre cooking
- Start cutting vegetables as below:
- Cabbage - one whole or most of one as it generally reduces after cooking. This takes time
- Potatoes - cube shaped
- Onion - long slices
- Green chilly - small pieces
Cooking
- Pre heat the cookware. I am using a Demeyere Stainless steel woke and cook it over a induction cooker
- 5 minutes at 400
- 10 minutes at 600
- 1 minute at 800 and then back to 600
- Add mustard oil. Not too much
- Add mustard seeds, chopped onions and chillies
- Fry it for 3 minutes till they become soft
- Add cut potatoes. Fry for 5 minutes
- Put the cut cabbage and add turmeric
- Keep stirring and mixing for 5 to 8 minutes
- Add salt and dhaniya(coriander) powder, chilly powder
- Keep stirring every 2 to 3 minutes
- Put on the lid and cook for 20 to 25 mins
- The cabbage fry is done. Enjoy!
Observations
- The time I cooked, the base of the steel pan had some burnt residue. It nothing harmful
